<p><strong>Must-Try</strong>:</p>



<p>On weekends, they serve:  <strong>Ajo Caliente</strong>&nbsp;(traditional dish from Andalusia. It is a rustic garlic-based soup made with bread, tomatoes, peppers, garlic, olive oil, and sometimes a bit of paprika) &#8211; a must try! </p>



<p>If you&#8217;re feeling adventurous, I definitely recomend try some of the local delicacies:</p>

</ul>



<p>While Er Beti offers a variety of traditional dishes (some less adventurous), these classics truly embody the essence of local gastronomy, passed down through generations. Make sure you don’t miss out on their homemade Berza during stew season—this hearty Andalusian stew, made with a mix of meats and legumes, is absolutely delicious.</p>



<p><strong>For Non-Spanish Speakers</strong>: </p>



<p>This is a true Spanish experience, as the restaurant does not cater to non-Spanish speakers. While there is an attempt at an English menu, it is poorly translated. If you’re up for an adventure, pointing and asking for recommendations might be the best approach!</p>

<p>Although the Polvorón cookie started with humble beginnings, it has a fairly interesting past.</p>



<p>It is believed by many, that a similar version of this recipe was brought to Spain by the Moors (they most likely did not use pig fat) however they did not become a popular item until the 16th century.</p>



<p>During this time, pig farming became highly encouraged by the government of Spain (with the help of the Inquisition). This coupled with a surplus of acorns within Andalucia, helped in producing a healthy supply of pigs and pig products.<br>Lard thus became a great substitute for cooking and had the added benefit of targeting and alienating non-Christians (Jews and Muslims) or false conversos within the peninsula.</p>



<h2 class="wp-block-heading" id="origin-story-of-the-polvoron"><strong>Origin Story of the Polvoron</strong></h2>

<p>To this day,  there is still much debate on which town, Estepa in Seville or Antequera in Malaga, first created Polvorón which we know and love today.  But for sure, the Polvorón cookie is a product of Andalucia. Evidence of a recipe showcasing how the Polvorón cookie was made that can be traced to 1740 in Morón de la Frontera.</p>



<p>However, most people believe it was the nuns (<em>monjas</em>) of Estepa, more specifically the &#8216;<em>Monjas Clarisas de Estepa</em>&#8216; who lived in the Convent of Santa Clara, established in 1599, that first created this cookie. These nuns were famously known for their baking and sweetmaking. During this period, the nuns would make sweetbreads, &nbsp;<em>&#8216;tortas de manteca</em>&#8216;, out of the same ingredients as the Polvorones are made today, therefore it is believed that they were the originators of the Polvorón cookie.</p>



<p>At first, the nuns guarded their recipes as secrets and one could only purchase these treats from the convents. As the popularity of the cookie grew the nuns had to hire workers to help them meet demand from cities all over Spain, such as Madrid and Sevilla.  Over the years, the cookie became known as a Christmas cookie. Eventually, other companies and businesses started to make their version of Polvorones.</p>



<p>At the beginning of the 20th century, a factory in Estepa was built to specifically produce&nbsp; Polvorón cookies. By the 1920s, there was such a rapid increase of companies being established to make these cookies, that the mayor called a meeting to create a union that guaranteed the quality of the product.  Presently, these products are covered under the Protected Geographical Indication <em>“Mantecado de Estepa”</em> and “<em>Polvorones de Estepa</em>”, which guarantees and monitors that this Gastronomic Heritage in Estepa is cared for, maintained by the 22 companies that are currently dedicated to this work. </p>



<p>Although there are many different locations you can go to today to find this traditional sweet if you find yourself in Estepa you should stop at <a href="https://lacolchona.es/" target="_blank" rel="noopener">La Calchona</a> and try this tasty cookie.</p>



<p><strong>IT IS REMARCABLE TO THINK , THAT THESE COOKIES WHICH ORIGINATED OUT OF A CONVENT IN THE MIDDLE OF ANDALUCIA, NOW SELL ITS PRODUCT ALL OVER THE WORLD.</strong></p>

<p>Today choosing from the many varieties of Polvorones can be daunting. Not only are there several different flavors, but several different shapes, as well. To make things more confusing, there is a shortbread cookie known as the Mantecado cookie. </p>

<p><strong>Polvorones vs. Mantecados</strong><br>Although these two cookies have the same origin story, there are some differences. To be noted: While all Polvorones can be considered Mantecados, not all Mantecados are Polvorones.</p>



<p>Polvorones always contain almonds.</p>



<p>Mantecados do not always have almonds and the recipe usually calls for more fat (butter, pig fat, or oil), a dash of cinnamon, and or an orange peel, they also are baked a little longer than Polvorones.</p>



<p>*Manteca means fat in English therefore Mantecados, have more fat.</p>



<p>Polvorones are almost always oval and covered with a thin layer of icing sugar or powdered sugar that gives them that characteristic appearance.</p>



<p>Mantecados are typically round and topped with sesame seeds; some of them even have sesame in them.</p>

<p><strong>Who loves bubbles? I do! Many people (such as myself) don’t know the difference between sparkling wines. Here is a little breakdown of the different types of bubbles and what makes them unique.</strong></p>



<h2 class="wp-block-heading">My Sparkling Wine Journey</h2>



<p>When I was young and naive, I assumed all bottles with bubbles were Champagne. It wasn’t until I got a little older that I learned about Prosecco, the Italian version of sparkling wine. Later, in college, I was introduced to Cava, the Spanish version. Here in southern Spain, Cava is technically considered a Catalonian wine. In Europe, Prosecco and Cava are easily found in supermarkets for around 10 EUR. However, when I returned to the U.S. to finish my master’s degree, I became acquainted with Mimosas (Champagne with orange juice) and realized my typical bubbly drinks of choice were pricier stateside. This led me to explore sparkling wine as a more affordable local option.</p>



<p>So why all the different names and prices for what seems like the same thing? I recently attended a fabulous sparkling wine-tasting class by Phylicia Stitzel, and I can tell you there’s more to it than meets the eye. <h2 class="wp-block-heading">What Makes Sparkling Wine Bubble?</h2>

<p>To be a sparkling wine, the wine has to contain bubbles, which come from carbonation (CO2). This chemical compound is the key source of those delightful bubbles. Sparkling wines also range from super dry to super sweet and come with various fragrances, making them incredibly diverse.</p>

<h2 class="wp-block-heading">The History of Sparkling Wine</h2>



<p>Did you know the Romans and Greeks were the first bubble producers? However, they didn’t know what they had—bubbly wine was often discarded as faulty. The more recognized history of sparkling wine begins with two contested stories:</p>



<ol class="wp-block-list">
<li><strong>Pierre Pérignon</strong>: In 1693, the French monk Pierre Pérignon supposedly created the Méthode Champenoise, the method still used today by many winemakers worldwide. He famously exclaimed, “Come quickly, I am tasting the stars.”</li>



<li><strong>Dr. Christopher Merrett</strong>: <strong>Thirty years earlier, this British physician documented the deliberate addition of sugar to produce bubbles in sparkling wine. He also invented the bottles strong enough to contain the carbonation.</strong></li>
</ol>

<h3 class="wp-block-heading">Champagne</h3>



<p>Champagne can only bear this name if the grapes are grown and the wine is made in the land of Champagne which is a region of France.&nbsp;</p>

<p>The strict rules and processes, some dating back to 1855, contribute to Champagne’s premium price and finer bubbles. Fun fact: Only Chardonnay grapes can be used for Blanc de Blanc Champagne. The primary grapes used in Champagne are Chardonnay, Pinot Noir, and Pinot Meunier.</p>

<h3 class="wp-block-heading">Prosecco</h3>



<p>Prosecco hails from the Veneto region in northeast Italy. It’s often more affordable due to fewer regulations compared to Champagne. Prosecco is fermented in large stainless steel tanks (the “tank method”), which creates larger bubbles. Only one grape is used—Glera. </p>



<p><strong>Fun fact</strong>: 2021 marked the first year Prosecco Rosé was produced.</p>



<h3 class="wp-block-heading">Cava</h3>



<p>Cava is made using the traditional Champagne method, with a second fermentation occurring in the bottle. While Catalonia is the main region for Cava, six other regions in Spain also produce it. The primary grapes used are Macabeu, Parellada, and Xarel-lo. Cava is classified from Brut Nature (super dry) to Semi Seco (sweet).</p>



<h3 class="wp-block-heading">Sparkling Wine</h3>



<p>Any wine with carbonation not categorized as Champagne, Prosecco, or Cava falls under sparkling wine. It’s made using various methods, the most common being the traditional (Champagne) and tank methods. Sparkling wines are known by other names worldwide: Cape Classique in South Africa, Espumante in Portugal, and Sekt in Germany and Austria.</p>



<p>I could get into so much more details because there is a whole world behind sparkling wines.</p>

<p>If you’re ever in Cádiz, Spain, don’t miss the chance to try Galantería, a unique sparkling wine made from Palomino and Moscatel de Alejandría grapes—the same varieties used to make Sherry. </p>

<p>Visitors or residents living near Cádiz have the perfect opportunity to sample a sherry wine from its source, in particular, Manzanilla sherry wine.</p>



<p><strong>The only place you should try manzanilla for the first time is in Sanlucar de Barrameda and only in Sanlucar de Barrameda.</strong> </p>



<p>I find that most people I talk to about the subject don&#8217;t know what a Manzanilla is let alone what a sherry wine is, and if they do then it usually wasn&#8217;t something they enjoyed. </p>



<p>According to my research, sherry is marketed in over 100 countries but, when I ask my US clients about sherry, some have only used it for cooking or have only tried it once or twice at a special event.  My UK clients usually know it as a beverage their grandparents once drank or as a special wine brought out at Christmas Parties.</p>



<p></p>



<h2 class="wp-block-heading"><strong>What is Sherry?</strong></h2>



<p>Now, this blog is not about sherry wines so I don&#8217;t want to get too much into detail. Technically sherry wines in their varieties are best explained in a winery or a bodega tour. But, one thing to know, is it is a fortified wine meaning having an alcohol content of 17-20 % compared to 10-15% for traditional wine. </p>

<p>This quote is by a sherry lover to be sure, but I have found sherry is not for everyone. It seems to be an acquired taste. Like all wines, I think the best ones are the ones you like and sherries are no different. I prefer <em>manzanilla</em> over<em> fino</em> but then again it all depends on the wine and its maker.</p>

<p>Sherry wine is a fortified wine made from Palomino, Moscatel, and Pedro Ximenez grape varieties. It can only be considered sherry if it is produced within the sherry triangle which includes the cities of, El Puerto de Santa Maria, Jerez de la Frontera, and Sanlúcar de Barrameda, as well as a couple of outlying towns.</p>



<p>The driest of the sherries are <em>Fino</em> and <em>Manzanilla</em>, the differences are the location they are aged. I will leave it to the experts to indulge you more in the intricacies of sherry making.</p>



<p><em>Fino</em> is from Jerez de la Frontera and el Puerto de Santa Maria which are located more inland and Manzanilla is from Sanlúcar de Barrameda which sits on the mouth of the Guadalquivir river. What makes manzanilla so special? Location, location, location&#8230;!</p>

<p>Sanlúcar de Barrameda is an Atlantic coastal city situated at the mouth of the Guadalquivir river, with Marshes of the Dona National Park across its banks. Because of the high humidity in this region, Manzanilla ages in a unique manner found nowhere else in the world. This is evident in its dry delicate flavor.</p>

<h2 class="wp-block-heading"><strong>Manzanilla &amp; La Gitana</strong></h2>



<p>La Gitana&#8217; is a truly independent family business also known as Bodega Hildago. </p>



<p>It is situated in the barrio Bajo or the low neighborhood of Sanlúcar de Barrameda in the downtown area.</p>

<p>Typically, before covid, most places did not require a reservation but now post-pandemic Cádiz has become accustomed to prearranged walk-ins. So I would call <strong>(+34 669 743 992) </strong>or <strong><a href="https://bodegashidalgolagitana.com/visitas/" target="_blank" rel="noopener">book online</a></strong> beforehand. </p>



<p>The English tour is at 11:00 but they want you there at 10:45 <strong>prepaid</strong>.</p>

<p>The meeting point, so you know, is not the same place as the location online. <p>Upon arrival, you are presented with your own glass of manzanilla, YES! The 11:00 am sherry lover in me was pleased.</p>

<p>The Bodega is beautiful! Designed in the typical winery architecture, the rooms were built with high ceilings and giant columns, and they are filled with big black wine barrels.  There are several Spanish-style courtyards decorated with old tiles and large colorful bougainvillea.</p>

<p>Please do not hate me for this but the guide&#8217;s English was really good and  understandable. I have an ear for English with a Spanish accent.  Often times I find visitors have a difficult time understanding the southern Spanish pronunciation of English.</p>

<p>Every place needs a good story and this bodega has one.</p>



<p>A century after the bodega was founded back in 1890, the bodega&#8217;s owner made, what we would consider a fabulous marketing decision today, and changed his company&#8217;s brand and symbol to &#8216;La Gitana&#8217; or The Gypsy Woman.</p>

<p>Why? Well, supposedly in that era Mr. Hidalgo would only sell his wine unbranded and in bulk to other smaller wine sellers. One of his best customers was a beautiful gypsy woman who would sell Mr. Hidalgo&#8217;s wine in her own <em>despacho de vino</em> or wine office (or sherry bar) in Malaga. This manzanilla wine soon became famous among the locals who called it &#8220;The Gypsy&#8217;s Manzanilla&#8221;. </p>



<p>Due to her success, Mr. Hidalgo decided to meet this gypsy woman. It is said they became good friends (or as rumor has it, it was a bit more than friendship). A few years later, in 1900, the winery decided to commission a Sevillana painter Turina, the father of the famous composer Joaquín Turina, to immortalize the gypsy lady in two portraits. </p>



<p>One was painted on a tambourine, and the other on a canvas. And thus the symbol of the bodega was born.</p>



<h3 class="wp-block-heading"><strong>Star #5</strong></h3>



<p>What gave this bodega its 5th star was we were able to try 3 Manzanillas all with their own flavor profiles.  Plus we were able to try several other of their sherry wines such as their Amontillado, Oloroso, and Cream.</p>

<p>Being the history lover that I am, the very last comment that I want to include in this blog about &#8216;La Gitana&#8217; and their delicious manzanilla wine is a fun little historical anecdote:</p>



<p>Back when Napoleon&#8217;s forces occupied Spain in the 1800s, the Bodega decided not to take sides. Being the savvy businessmen that they were, they made sure to keep the French troops happy by serving them Sherry wine called Napoléon. Then when the British forces came to help remove the French troops, the winery switched the name Wellington, after the 1st Duke of Wellington the general who led the British into Spain, to keep the British happy.</p>

<p>Cádiz summers can be sweltering—think 38°C (and for those of you from the big continent across the pond 100,4<strong>°F</strong>) kind of hot. While we&#8217;re famous for our fried fish, sometimes you need something a little lighter and cooler to beat the heat. So, from my non-air-conditioned house with a trusty fan at my side, let me introduce you to five refreshing summer tapas you have to try when you&#8217;re in Cádiz.</p>



<p>First things first, what is a <em>tapa</em>? <em>Tapas</em> are small portions of different Spanish dishes served in bars, usually accompanied by a glass of wine, vermouth, and/or beer.</p>

<h2 class="wp-block-heading"><strong>1. Gaspacho vs. Salmorejo?</strong></h2>

<p>These two cold tomato-based soups are Spanish classics, and both are perfect for a scorching day.</p>



<p><strong>Gazpacho</strong> is made with tomatoes, cucumber, garlic, olive oil, vinegar, and water—sometimes with a hint of green pepper or onion. Want to get creative? Try swapping in watermelon for tomatoes. It&#8217;s often served chilled in a glass, almost like a savory smoothie.</p>



<p><strong>Salmorejo</strong>, on the other hand, is thicker and creamier, made from tomatoes, day-old bread, garlic, olive oil, and salt. Traditionally served with Serrano ham and chopped hard-boiled egg, it originated in Córdoba, but you&#8217;ll find it everywhere around here.</p>

<p>A colorful seafood salad that sits proudly on many tapa bars across Spain. It’s made with chopped shellfish or fish, bell peppers, onions, and dressed with olive oil, vinegar, and salt. Originally a humble fisherman’s dish, it&#8217;s now a light and healthy staple.</p>

Made with fresh raw fish, avocado, onions, lime, soy sauce, and sometimes a dash of wasabi, these tartares are light, flavorful, and made with local ingredients. Served cold, it’s perfect for when you want something fancy without the fuss.d ;)).</p>

<p>Pickled anchovies might sound intense, but give them a try. These white anchovies are marinated in vinegar, olive oil, and garlic, and topped with parsley. They&#8217;re a true southern Spanish delicacy—simple, tangy, and oh-so-refreshing</p>

<p>AThis one’s technically more of a fish cake than a paté, made from scorpionfish. Ugly fish? Maybe. Delicious result? Absolutely. It’s creamy, flavorful, and usually served with crispy bread and a dollop of alioli or mayo.</p>

<p>All of these tapas pair beautifully with a cold Cruzcampo, Estrella Galicia, or a chilled glass of white wine. I usually go for a white in the summer because you can always add an ice cube if necessary, although I have to say every once and a while a Rose can hit just the spot. Feeling extra Spanish?
